Remus Racing Exhausts have much less resistance against the blow through, that´s the reason you need a bigger jet. But you have also to increase the blow through of the airbox/airfilter! The best way to check this is to mount a K&N-Racingfilter in first stage. If this is not enough you may modify the airbox to mount a bigger filter with more blow through. Drilling holes in the airbox would help only a short time - till the engine will have a "sudden death" in reason of dirt air....
Notice: #135 is only a standard value, may be a little bit smaller or bigger one is better for you - this depends also on the special characteristics of your engine and not only from the exhaust. I expect that you have to test different types (in this range), till you´ll find the best combination........(tune up bikes is not a quickie

In Austria you can have both sprockets (16 and 15) as stock parts.
I think, all jets of newer Mikuni-Bike-Carbs should fit... exact dimension of the jet I can send you on weekend, when I´m at home...
Speed: With this modifikations you may reach 190-195km/h under best conditions. Don´t expect more than 51-52HP! If you want to go more then 200km/h with the GS, than you have to do a strange motortuning, like increase compression ratio, bigger pistons, bigger valves, and, and, and..... This only makes sense if you are racer or enthusiast or both.... otherwise it makes really more sense to by a GSX600 or more......
